Ye Olde Pie & Sausage Shoppe produces Traditional Dry Cured Bacon on the premises. Traditionally dry curing produces a completely different bacon to that generally available from the mass market. Traditional dry curing is a slow process - producing flavoursome bacon without the usual watery slime from bacon which has been brine cured.
