We are running an open course CIEH Level 2 Food Safety in Catering course on Worthing Pier on 15.04.2015. The course introduces the candidate to definitions of food safety, consequences of poor food hygiene courses, recognize the symptoms of food poisoning and identify those most at risk. Understand the legal role of the food handler and the enforcement officer and appreciate why records must be kept, Furthermore the candidate will be able to differentiate between physical, chemical and biological contaminants, understand micro-organisms, bacteria and growth. Candidates will also be able to understand why temperatures must be kept and how to store, defrost, chill, cook and freeze foods properly. They will understand the role of cleaning and consider the differences between sanitizing and disinfecting as well as safe storage of cleaning equipment and the role of hygiene.
