Wood fired Homemade Pizza

Our pizza's unique smoky aroma and crispy bite is mostly due to the
woodfired oven. The high temperature of the oven locks all the flavours
in and, because we use only fresh produce for our pizzas and no oil in
baking, they are a much healthier option than most of the fast food. You
must taste the difference!
We come to each village at about 4 pm and we light the fire to start
warming up the oven. It takes about an hour to reach the temperature of
500°C or 930 F - the right temperature to start baking the pizzas. The
wood for the oven comes from a West Somerset forest - clean, dry and
aromatic - giving the pizzas an unforgettable smoky flavour.
We spead the dough and cover the base with tomato sauce while-you-wait or just before you pick up your order from us.
We knead the dough the day before using strong flour, fresh yeast and extra virgin
olive oil. The tomato sauce is homemade from Italian plum tomatoes,
extra-virgin olive oil, lots of onions and herbs. And nothing doggy!
We then cover the pizza with toppings of your choice - mushrooms,
onions, peppers, ham, mozzarella balls - freshly sliced, while the oven
was getting warmed up.
Finally, we add a generous helping of our special blend of cheeses before the pizza goes into the piping hot oven...It takes about two minutes to bake the pizza... Enjoy it!
